Keto Cheesy Herb Muffins are keto-friendly and delicious. You can enjoy it with eggs and avocado for breakfast or dinner with chili. They are so easy to make and so flavorful! The combination of cheese, garlic, and cayenne is infused in these Keto Cheesy Herb Muffins.
We prefer these over any other keto-friendly snacks or desserts. find that I tend to overeat them. In case you are left with some amount of you can enjoy next day during lunchtime. The keto-friendly version of them can be incorporated with almond flour.
Baking with almond flour is very easy. We love how it produces results that are comparable to whole-wheat baked goods. Just make sure you use well blanched and finely ground almond flour.
A nonstick spray for pan
Half egg yolk of a medium-sized egg
0.5 g teaspoon sea salt
0.6 teaspoon garlic powder
0.3 teaspoon cayenne
30 g almond flour
0.5 g baking soda
45 g shredded cheddar cheese
15 g grated Parmesan
Preheat the oven to 350 degrees F. Place the muffin cup with paper liners and spray the liners with nonstick spray (I use avocado oil spray). Or use greased silicone cups.
In a large bowl, whisk together the eggs, salt, garlic powder, and cayenne.
Using a rubber spatula, mix in the almond flour, then the baking soda, and finally the cheeses. The batter will be thick and dough-like. You can prepare it with you hands, although it’s quite sticky.
You can use a 60 ml scoop to divide the batter evenly between the muffin cups.
Bake until golden and a toothpick inserted in the center comes out clean, 22-25 minutes.
Cool 5 minutes in the pan, then transfer to a cooling rack to cool 5 more minutes before serving.
