This Punjabi Stuffed baingan is a family recipe. Here, the Baingan is filled with a spice powder mix and not any veggies. It’s the spice blend that gives the dish its taste and flavor. The recipe is also formed without onions and garlic. So it’s just the spices and brinjals. Simple but flavorful.
- 250 grams small brinjals (baingan or eggplants)
- 100 g potatoes
- ½ tsp turmeric
- 1 tsp Garam Masala Powder
- One tsp chili powder
- One tsp dried mango powder (amchur)
- 1 tsp coriander powder (ground coriander)
- 1 tsp cumin powder
- Salt to taste
- 2 tbsp oil
- Firstly, mix all the six spice powders along with salt – garam masala powder, chili powder, turmeric powder, coriander powder, cumin powder, and amchur (dried mango) powder, and salt. Keep aside.
- Wash the baingan or brinjals and dry them with the kitchen towel. Slice off the stem from the brinjals.
- Slit each baingan into 4 parts taking care that you don’t cut the entire baingan. Fill the baingan with the spice powder mixture evenly. Keep all the stuffed baingan aside.
- Peel and chop the potatoes. If using small potatoes then chop if they are medium-sized. If they are little, then just keep them whole with or with the peel.
Making Stuffed Baingan
- In a wok or Kadai or heavy-bottomed pan. Add the oil.
- Then Adjoin the bharwa baingan, stir and saute the baingan for a minute. Then enfold the pan and prepare the stuffed baingan on a low flame.
- Check the stuff and stir the veggies. Cover and then continue to cook.
- Once the stuffed baingan is cooked and softened, add the remaining spice powder mix.
- Stir well and saute for a minute. Look over the taste and add more salt if required.
- Serve bharwa baingan hot with chapattis or plain paratha.
