Keto cauli Rice is a healthy, low-carb, grain-free, less starchy replacement for rice. So what is it? It’s simply cauliflower pulsed in a food processor until it forms into granules that are about the size of rice. Is it as good as rice?

It’s pretty great for your health too. When it’s seasoned well and used in a recipe with other great flavors and textures going on, it is delicious and you’ll feel great about getting more vegetables into your day.

Cauliflower is such a versatile vegetable and we can experiment it with different recipes and one of my favorite thing to do with this cruciferous vegetable is to turn it into “rice” because rice can often leave dishes feeling heavy, it’s nice to substitute a vegetable where a starch would usually be. Besides, it’s a great way to squeeze more servings of vegetables into your day, and also it is keto-friendly.

Keto cauli rice tastes delicious and is great for weekly meal prep so You can easily prepare a batch and add it to your meals for a veggie boost all week long. There are two techniques for making Keto cauli rice, You can either use a box grater with the medium-size holes traditionally used for cheese or a food processor with the grater blade to blitz it into small pieces. The purpose of both techniques is to cut the cauliflower into small pieces just like rice granules.

Ingredients

1) Cauliflower.

2) Coconut Oil.

3) Onion.

4) Garlic.

5) Ginger.

6) Soy Sauce.

7) Black Pepper.

Instructions

1) Preheat coconut oil in a pot. Add Onion, garlic, ginger and saute them.

2) Add the cauliflower to the pot.

3) Stir well mix to mix with onion, garlic, ginger. Cook Until lightly toasted.

4) Add stock to the pot and let the pot boil. Reduce pot to a simmer until reduced.

5) Flavor pot with soy sauce ( in little amount ), black pepper, and citrus.

6) Beat Xanthan gum into the pot. Continue to cook pot until the congee has thickened. Serve congee hot.
