INGREDIENTS :
  • 1 ½ cup of white vinegar
  • 1 cup apple cider vinegar
  • Stevia
  • 1 tbsp yellow mustard seed and one tbsp curry powder
  • one tbsp kosher salt
  • 1/ tsp whole black peppercorns
  • 150g cauliflower
  • 80g carrot

INSTRUCTIONS :
  • Use a stockpot over medium flame and add vinegar, sugar, mustard seeds, curry powder, Himalayan salt, and peppercorns. Take the mixture to a boil.
  • Now while the mixture is boiling, cut the cauliflower head into small florets and the carrot into bite-sized pieces.
  • Now, add the chopped cauliflower and carrot to the stockpot. Allow the liquid to return to a boil.
  • Turn the heat of the flame to medium-low and simmer until the vegetables are tender-crisp.
  • Now with the help of a slotted spoon transfer, the vegetables into pit-sized canning jars.
  • Utilizing a wide funnel, ladle the hot brine over the top of the vegetables, leaving around ¼ inch of headspace. 
  • Now place the lids on top of the jars and fasten the rings to finger-tightness. 
  • Freeze for three days before using, and use within three weeks.
